Vegetarian Arab Rice/ Nasi Arab

PREP TIME : 15 mins
COOK TIME : 1-1.5 hours
INGREDIENTS
Marinade Mock Meat/ Mushroom
1. 3 tbsp ground spice
2. Garlic x 3 cloves
3. Cardamom x 6 pieces
4. Cinnamon x 1 stick
5. Cumin seeds x 2 pinches
6. Ginger x ½ inch (pounded)
7. Turmeric powder : ½tsp (optional)
8. Olive oil x 2 tbsp
9. Salt to taste
10. Lemon juice
11. Mock meat x 500g
12. Sliced mushrooms x 200 g
13. Tomato x 1 (halfed)
STIR-FRY
1. Onion x 1 medium size (finely sliced)
2. Carrot x1 chopped
3. Dried chillies
4. Olive oil x ¼ cup
5. 6 cups of water
6. 2 tbsp ground spice
Fragrant Basmati Rice x 500g
Coriander leaves for garnishing
STEPS:
1. MARINADE the mock meat and mushrooms with the ingredients listed as above for at least one hour.
2. When the marinade is ready, fry the onions over a medium high heat until they turn translucent.
3. Add the carrots, tomatoes and dried chillies to the mixture. Saute for about 5 minutes over low heat.
4. Add 6 cups of water to the broth along with all of the MARINADE mixture and the ground spice.
5. Once the mock meat, mushroom, tomatoes and carrots (bulk mix) are cooked remove them from the spice broth.
6. Use the spice broth to cook the rice in a rice cooker. Add additional water if necessay.
7. Add the bulk mix to the rice cooker after 15 minutes of cooking time.
8. Remove from rice cooker once cooked and garnish with Coriander leaves.

TIPS
As every rice cooker is different, the cooking time varies. The timing given above is a rough estimate.
To avoid soggy rice, be careful to not put too much water. Some people would not include the spice broth, but I personally think it’s a waste to not include the flavourful marinate.
To make the dish healthier, add some vegetables such as long beans.
